Small batch pickles from Fort Kochi – made fresh by hand
This pickle is made using fresh prawns sourced from the coast and cleaned and prepared within 24 hours of being caught. Combined with traditional spices and prepared using familiar coastal methods, it offers a rich, spicy, and tangy flavour with the natural sweetness of prawns.
Fresh Prawns: Fresh prawns (chemmeen), carefully cleaned and deveined.
Cleaning Mix: Vinegar, sea salt, and turmeric used to wash the prawns.
Spice Mix: Turmeric, red chili powder, and salt used to marinate the prawns.
Fresh Ingredients: Ginger, green chilies, garlic, and curry leaves.
Traditional Spices: Mustard seeds, roasted fenugreek powder (uluvapodi), turmeric, and asafoetida (kayapodi).
Oil and Vinegar: Pure sesame oil (nallenna) and traditional toddy vinegar (kallu vinegar) that give the pickle its rich and slightly sharp flavour.
Preparing the Prawns
Fresh prawns are cleaned carefully and the veins are removed. They are washed with vinegar, salt, and turmeric, and then drained well to remove any moisture.
Marinating
The prawns are coated with turmeric, red chili powder, and salt. They are left to rest for a while so that the spices absorb well into the prawns.
Frying the Prawns
The marinated prawns are fried in sesame oil until they become firm and slightly golden. They are then kept aside.
Preparing the Spice Base
In the same oil, garlic, ginger, green chilies, and curry leaves are sautéed until aromatic. Chili powder, turmeric, asafoetida, and roasted fenugreek powder are added and mixed carefully on low heat.
Final Cooking
Toddy vinegar and a little salt are added and brought to a boil. The fried prawns are then added back into the mixture and simmered until the prawns are well coated with the thick, spicy gravy.
Allow the pickle to cool before storing it in clean glass jars. For best results, keep the prawns covered under a layer of oil to maintain flavour and freshness.
